Sabounia works with farmers in Aleppo whose farms are no more than 40 km from Aleppo. Respectful of the environment, their practices remain entirely natural, abstaining from fertilizers and pesticides and benefiting from a minimum of watering. The harvested olives are worked the same day, to preserve their degree of acidity and especially the same PH on which depends the final result. They then undergo a second cold pressing, thus delivering the oil that will go into the composition of their bread.
